These are perfect to make ahead of time and reheat in the mornings for a busy on-the-go person! and 21 Day Fix Approved!
Two muffins counts for:
1 Red
1/2 green
1/2 blue (with feta cheese)
INGREDIENTS
Makes 12 muffins. Serving Size = 2 muffins
- 12 Eggs
- 3 Cups veggies of your choice (peppers, tomatoes, spinach, kale, mushrooms, onion)
- 1/2 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/2 cup feta cheese or shredded mozzarella
- Olive oil or muffin paper liners.
DIRECTIONS
- Preheat oven to 350°.
- In a large bowl, beat eggs. Add veggies, salt, garlic powder and pepper. Stir in cheese.
- Spoon by 1/3 cupfuls into muffin cups coated with olive oil or lined with muffin paper. Bake 25 minutes or until a knife inserted near the center comes out clean.
I made 9 eggs and 2 cups of veggies and that made 16 muffins. Did I do something wrong?

If I wanted to add broccoli do I need to cook it first?

It may be better if the broccoli is already steamed 🙂 I usually steam anything that I add in.

How do you store these and how long do they last?

I don’t keep them in the fridge longer than a week. But you can freeze them, and they keep for over a month. Air tight freezer bags are best.

I will reheat in the microwave if they have been in the fridge, usually for around 30 – 45 seconds, as the eggs heat up quickly 🙂

Made the mistake of using the mini muffin container instead and now I have a ton. Kids approved so that’s great!

Can you add a meat? If so what do you suggest?

I like to do ground turkey or turkey bacon. For this recipe I only use about half a pound of ground turkey, and I of course brown and drain it before adding it in the mixture.
